I have wicker storage baskets under my tables, one for each cable type. The cats have never taken any interest in them. Easy to drop cables in when unpatching, too.

As an alternative try a mini laser light show in your studio to give him a dizzying number of alternatives to chase instead.

I've been thinking it would be cool to make a cable hanger cabinet or cupboard. Fill it with pegs for long cable to drape over
and hangers for shorter cables. You could put hangers on the doors and throughout the cabinet itself and mount the lot on the wall.
You could even light the interior. Surprising that no body has seen fit to make something like that, someone like Erik Needham
or the like, I think he could design something really nice.
Mine will be less nice which is fine as living in Hawaii would make producing them to sell undesirable due to shipping.

Yes. That's kind of how I imagined an electric guitar case 'cable cabinet' would end up. Hadn't thought of the wall mount for it, but that's a nice addition.
