You need some sort of DAW software on your computer. If you are not averse to doing a bit of Pure Data programming you could write your own app to do this. I haven't used an ES8 but with an ES3 it's as easy as sending a signal to a dac object in Max. Depends on your definition of jazz I suppose but if you're including free improvisational type stuff then Thomas Lehn springs to mind. A great example of someone who knows his instrument (in this case an EMS Synthi) inside out.

No money for new modules at the moment but the best 5U Xmas present for me would be Bruce at Modcan continuing to make a good recovery from his illness. It would be wonderful to one day maybe see some new Modcan module designs.

The CV Recorder was my gateway into Bruce's modules. I'd never part with any of them.
