Just buy a RME UFX. RME is well known for super frivers, supporting their products more than 10 years and really nice sounding clean converters. Working with Eurorack and RME is a joy because you will hear the difference. Wiht the software I can use different routing templates for different usercase...

I don't know why but doepfer Oscs are always so powerful. Simple waveforms wit a little bit of analog colourful saturation and I'm more happy. Never had the same feeling with an analog synth out there...

I would have a look into the Peak & Hold from Cg products. Definetly a very handy kind of a envelope follower. Actually designed for percussion (with a pickup) so you could even experiment with an acoustic guitar but also go directly in with a electric guitar (it has a build in amplifier). The built...

I'm a bit in the same boat at the moment.
I have a RME and a Es-3 but only used it yet for cv.
But I don't get it right what other options do you have beside from adat. Adat has been around for a while, is there something else (newer?)

Not who you asked, but right now I'm patching some drums into the Sarajewo and then taking each tap out into their own channel of the Instruo Tanh for feedback limiting and then into a mixer with some pan automation, I then run this mix into the Katowice and play with the various bands in the Katow...

I can't help with that specific hardware but the RME software is capable of all the stuff you mentioned. I use an old Ramsa DA7 and a Digiface USB. It has fader layers so I have the mixer's analog inputs 1-16 going into the computer over ADAT to record and then on a second layer 17-32 stuff coming ...
