A big part for me was finding libraries of parts that will get you going so you do t have to create what you need in the beginning.
sparkfun and adafruit have some useful libraries that have helped me (Eagle user)

For “self playing” you’d probably want some sort of random source and I guess a quantizer or two. Or a sequencer or two for more controlled self playing.. The history of “cheap semi modulars” goes back to this very concept. It’s why the minimoog came about, because performing musicians were using the same basic patch structure for most of their sounds. Changes the “geometry” of how the carrier cv modulates the internal sine oscillator .. 1 does less of this, 2 does more, and 3 is the most modulation. A synth that big should be so flexible that it avoids having a ‘sound’.

No sine waves is a big omission, stacking sine oscillators is a pretty fundamental synthesis technique!
